Apple Butter Stuffed Pork Chops

These slow-cooked pork chops are filled with a simple homemade stuffing and finished with a generous coating of Bauman’s Apple Butter. Cooking them low and slow in a crock pot keeps the meat tender and full of flavor.

  1. Preheat oven to 350°F. In a skillet over medium-low heat, melt butter. Add onion, celery, and herbs. Cook for about 10 minutes, until onions are tender but not browned.
  2. In a medium bowl, combine bread, cooked onion mixture, and chicken broth. Toss to combine. Line a baking sheet with foil and spread mixture into a single layer. Cover with foil and bake for 15 minutes. Remove foil and bake uncovered for an additional 15 minutes. Let cool.
  3. Lightly grease the inside of a crock pot with vegetable oil. Cut a deep slit into each pork chop to form a pocket. Stuff each chop with the cooled stuffing and season both sides with salt and pepper. Brush apple butter onto one side of each chop. Place the chops apple-butter side down in the crock pot, overlapping as little as possible. Brush the tops with remaining apple butter.
  4. Cover and cook on low for 5–7 hours, until pork chops reach an internal temperature of at least 145°F.
