Apple Butter Stuffed Pork Chops
These slow-cooked pork chops are filled with a simple homemade stuffing and finished with a generous coating of Bauman’s Apple Butter. Cooking them low and slow in a crock pot keeps the meat tender and full of flavor.
Ingredients
For the Stuffing
- 3 tablespoons unsalted butter
- ½ yellow onion, diced
- 1 stalk celery, chopped
- ¼ teaspoon dried sage or rosemary
- 3 cups bread, cubed
- 1 cup chicken broth
For the Pork Chops
- Vegetable oil
- 4 bone-in pork chops
- Salt and black pepper, to taste
- ½ cup Bauman’s Apple Butter
Directions
- Preheat oven to 350°F. In a skillet over medium-low heat, melt butter. Add onion, celery, and herbs. Cook for about 10 minutes, until onions are tender but not browned.
- In a medium bowl, combine bread, cooked onion mixture, and chicken broth. Toss to combine. Line a baking sheet with foil and spread mixture into a single layer. Cover with foil and bake for 15 minutes. Remove foil and bake uncovered for an additional 15 minutes. Let cool.
- Lightly grease the inside of a crock pot with vegetable oil. Cut a deep slit into each pork chop to form a pocket. Stuff each chop with the cooled stuffing and season both sides with salt and pepper. Brush apple butter onto one side of each chop. Place the chops apple-butter side down in the crock pot, overlapping as little as possible. Brush the tops with remaining apple butter.
- Cover and cook on low for 5–7 hours, until pork chops reach an internal temperature of at least 145°F.
