These blondies are quick to bake. You can swap the butterscotch chips for white chocolate chips and add cinnamon or apple pie spice if you like.

  1. Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper.
  2. Simmer apple cider until reduced to ½ cup. Add butter and stir until melted. Let cool.
  3. Whisk cider mixture with brown sugar, egg, vanilla, salt, and baking powder.
  4. Stir in oats, baking chips, and flour until just combined.
  5. Spread batter into pan and bake about 25 minutes, until a toothpick comes out clean.
