Apple Cider Blondies
These blondies are quick to bake. You can swap the butterscotch chips for white chocolate chips and add cinnamon or apple pie spice if you like.
Ingredients
- 1 cup Bauman’s apple cider
- 1 stick (½ cup) unsalted butter, cubed
- ½ cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup rolled oats
- ½ cup butterscotch or white chocolate chips
- 1 cup all-purpose flour
Instructions
- Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper.
- Simmer apple cider until reduced to ½ cup. Add butter and stir until melted. Let cool.
- Whisk cider mixture with brown sugar, egg, vanilla, salt, and baking powder.
- Stir in oats, baking chips, and flour until just combined.
- Spread batter into pan and bake about 25 minutes, until a toothpick comes out clean.
